Chef notes: "I first tried this popular street food in Osaka, Japan, and have loved it ever since. Okonomiyaki is a savory version of the Japanese pancake. You can easily add other ingredients like pork or shrimp, or vary the dish with other types of cabbage, as well as top them with a variety of condiments like Japanese mayonnaise or dried seaweed."

½ head Chinese cabbage
1 Carrot
3 stalks Spring onions
4 tbsp Ketchup
3 tbsp Worcestershire sauce
3 Eggs
120 ml Water
2 tbsp Light soy sauce
1 tbsp Roasted sesame oil
140 g Flour
  Vegetable oil (for frying)
  Black sesame seeds (for serving)
  Japanese mayonnaise (for serving)
  Okonomiyaki (to serve)

Step 1/4

Core and shred the Napa cabbage, then place in a large bowl. Grate the carrots into the same bowl with a vegetable peeler. Thinly slice the scallions and add most of them to the bowl with the cabbage and carrots. Add the ketchup and Worcestershire to a small bowl and stir to combine, then set aside.

Place eggs, water, soy sauce, and sesame oil in a blender and blend until well combined. Add flour and blend until a smooth batter forms.

Pour the batter into the bowl with the cabbage and stir until everything is evenly coated.

Step 4/4

Heat a non-stick skillet over medium-high heat. Pour in the oil and let it get hot. Pour half of the batter into the pan. Flip the pancakes once the underside is golden brown and fry until golden brown on both sides, about 3 minutes per side. Serve the warm pancakes sprinkled with okonomiyaki sauce, black sesame seeds, Japanese mayonnaise, and some scallions. Enjoy your meal!
