Winter is coming! In wet and cold weather, you just want to snuggle up with a blanket on the sofa and watch a movie or read a good book. This delicious Tonkotsu Ramen can not be missing as comfort food.

Veggie soup

1 tbsp Sesame oil
3-4 Carrots
Onions
100 g  Ginger
3 green part of spring onions
red chilli
2-3 Celery sticks
1 Leek
8-10 Dried Shiitake mushrooms
1 clove  Garlic 
2-2,5 L  Water
  Bay leaves
  Pepper corns
  Anis stars 

 

Other ingredients

500 g Pork belly
1 Egg
1 tbsp Instant noodles Tonkotsu Ramen
1 tsp Soy sauce 
1 tsp Sake
1 tsp Mirin
3 pc.  Nori leaves
  Sesame oil for frying 

Step 1/5

Bring 2-2.5L of water to a boil with the ingredients for the vegetable soup. After 45-55 minutes, taste and set the vegetable soup aside.

Roll up 500g of pork belly, tie it in a circle with a rope and fry it carefully with sesame oil, pour sake, soy sauce and mirin, cover it with a foil and bake it for 3-4 hours until the pork is golden brown on the outside and soft and juicy on the inside! Set aside.

Bring an egg to a boil for about 7 minutes. Then place in a sink and lightly peel, cut in half and use half the egg!

For the broth: put the package of instant noodles for tonkotsu soup with the tonkotsu powder sachet in a ramen bowl, pour the hot vegetable soup, then put the instant noodles in hot water for 3-4 minutes and drain, add to the tonkotsu soup!

Top it with 3 pieces of Chachū pork belly, green onions, half an egg and 3 pieces of nori leaves and sesame seeds!
