"This recipe for chicken satay is one that I make over and over again. Perfectly grilled chicken satay skewers in an extremely tasty marinade. Served with the best and creamiest peanut sauce!"

225 g Chicken breast (boneless and skinless)
1½ tbsp Creamy peanut butter
5 g Coriander
1½ tbsp Sesame oil (divided)
½ tbsp Water
½ tsp Salt
1 tbsp Vegetable oil
½ tbsp Sesame seeds
½ Lime (for serving)
5 g Ginger
1 clove Garlic
¼ tsp Red curry paste
½ Lime (juice)
1 tbsp Coconut milk
1 tbsp Soy sauce
1 tbsp Honey

Step 1/4

Peel the ginger and garlic and place in a blender with the curry paste, juice of half the lime, coconut milk, soy sauce and honey and blend to a sauce. Cut the other lime half into small wedges and set aside to serve. Wash and coarsely chop the cilantro and set aside.

Step 2/4

Cut chicken breast into strips and place in a medium bowl. Add a little more than half of the sauce and some of the sesame oil to the bowl with the chicken. Mix together and cover with plastic wrap. Let sit for a while (alternative: refrigerate overnight).

Step 3/4

In a small bowl, whisk together the remaining sauce with the peanut butter, water, remaining sesame oil, and salt to make a peanut sauce. Add more water if needed to reach desired consistency.

Step 4/4

Thread chicken onto skewers, heat vegetable oil in a grill pan over medium heat. Cook chicken skewers in hot skillet about 8 - 10 minutes per side, or until chicken is cooked all the way through. Sprinkle with sesame seeds. Serve skewers with peanut sauce, lime wedges and cilantro. Enjoy your meal!
