|1½ tbsp||Sesame oil (divided)|

|½ tbsp||Sesame seeds|

|¼ tsp||Red curry paste|
|1 tbsp||Coconut milk|
|1 tbsp||Soy sauce|
Peel the ginger and garlic and place in a blender with the curry paste, juice of half the lime, coconut milk, soy sauce and honey and blend to a sauce. Cut the other lime half into small wedges and set aside to serve. Wash and coarsely chop the cilantro and set aside.
Cut chicken breast into strips and place in a medium bowl. Add a little more than half of the sauce and some of the sesame oil to the bowl with the chicken. Mix together and cover with plastic wrap. Let sit for a while (alternative: refrigerate overnight).
In a small bowl, whisk together the remaining sauce with the peanut butter, water, remaining sesame oil, and salt to make a peanut sauce. Add more water if needed to reach desired consistency.
Thread chicken onto skewers, heat vegetable oil in a grill pan over medium heat. Cook chicken skewers in hot skillet about 8 - 10 minutes per side, or until chicken is cooked all the way through. Sprinkle with sesame seeds. Serve skewers with peanut sauce, lime wedges and cilantro. Enjoy your meal!
