100 g Rice noodles
100 g Beef (e.g. fillet)
100 g Smoked tofu
1 Red bell pepper
2 stalks Spring onion
1 clove Garlic
2 Eggs
2 tbsp Peanuts
10 g Coriander
50 g Sprouts
  Salt
  Pepper
  Chili powder
  Vegetable oil for frying
Sauce  
2 tbsp Fish sauce
2 tbsp Soy sauce
1 Lime (juice)
1 tbsp Brown sugar

Step 1/4 - Preparation

Cook the pasta according to package directions. Cut beef into slices about the thickness of a finger. Coarsely chop the peanuts. Toast in a pan beforehand, if desired. Cut tofu and bell bell pepper into strips, slice scallions into fine rings. Finely chop garlic. Beat eggs in a small bowl.

Step 2/4

The next steps must be quick, so preparation is important. Sauté bean sprouts, bell peppers, tofu, green onions and garlic in a little vegetable oil. Season with salt and pepper and place on a plate.

Step 3/4

In the same pan, fry the beef, add the vegetables and egg. Stir constantly and season with salt and pepper. When the egg is still semi-liquid, add the rice noodles and continue frying.

Step 4/4

Mix fish sauce, soy sauce, brown sugar and lime juice in a small bowl. Add the finished sauce to the stir fry and simmer for about 2 - 3 min. Then fold in freshly chopped cilantro and add chili powder to taste. Garnish with chopped peanuts and serve.
